Spreadsheet Options- customize font type and size as well as the colors of your spreadsheet.

Assignments- limits the assignments shown on the spreadsheet to a certain date range (like a grading period). You can also change the date format here.

Display Attendance- drops an Absence and Tardy column (with current numbers) onto your grade spreadsheet. Very useful.

Citizenship- unless your site uses the Citizenship feature check the box and regain some room on your spreadsheet.
